What this dish means to me

As an international student who didn’t cook much, not a massive fan of pot noodles or beans on toast, this was an easy, one-pan recipe using UK supermarket perfect for a home style meal without complex cooking.

INGREDIENTS

10 Chicken wings

1 Can of Coca-Cola

3 garlic cloves

4-5 ginger slices

2 tsp Soy sauce (Dark Soy Sauce for colour)

1 tsp Oyster sauce

1 tsp cooking oil

1 -2 stalks spring onions

Salt & Black pepper – to taste

Sesame seeds (optional)

For Vegetarian option try with Tofu or Quorn chicken pieces

Step 1 – Prepare the chicken

Rince and pat dry the chicken wings. If frozen, defrost first. Lightly season with salt and black pepper.

Step 2 – Sear the chicken

Heat 1 tsp of oil in a frying pan or wok over medium heat. Add the ginger slices and garlic, fry until fragrant (30 secs). Place the chicken wings in and pan fry both sides till golden brown.

Step 3 – Add the sauce & Coca-cola

Pour in the soy sauce and oyster sauce, stir well. Add the full can of Coca-cola, making sure the wings are mostly covered.

Step 4 – Simmer & Reduce

Bring to boil, then lower the hear and let it simmer for 20 minutes, stirring occasionally. Once the sauce thickens and becomes glossy, turn off the heat

Step 5 – Serve & Enjoy

Garnish with chopped spring onions and sesame seeds. Best served with rice.
